hi there!

I’m Karen

As a diabetes nutrition specialist, helping women prevent and reverse type 2 diabetes is my professional life work . . .  but it’s also a personal mission. I am fighting diabetes for myself and my family as well.

My Story. My Approach.

When I was 12 my dad was diagnosed with type 2 diabetes, but I never really understood the struggles he was going through until later when I started learning about diabetes in college. That’s when I knew I wanted to specialize in diabetes, so I could help him and others manage diabetes.

Over the years I have seen him and other family members go through physical and emotional suffering from uncontrolled blood sugars.

I also have experience some of those challenges when I had gestational diabetes over 25 years ago. Now I am living with prediabetes, but thankfully so far, have been able to prevent type 2 diabetes.

My passion is to help others get blood sugars in control with food, movement, and monitoring strategies. Much of what I teach are strategies that I have used successfully and helped hundreds of others with over the years.

In 2021, I decided to start offering my strategies outside the clinic setting in order to help more people reverse type 2 diabetes.  This also allows me to develop very personalized solutions for each individual using cutting edge technology and testing tools.

If you are wondering about my credentials, I am an RDN, LD, CDCES, which means registered dietitian nutritionist, licensed dietitian (licensed in Minnesota and South Dakota), and certified diabetes care & education specialist.  In short, I am your diabetes nutrition specialist.

Many people shy away from meeting with a dietitian because they think we will tell them what they are doing wrong or take away all their favorite foods.

That is not my approach. I have found the best way to help is to take time to listen to your concerns, and work WITH you to create a personalized plan and problem solve with you along the journey to your wellness goals.

I would love the opportunity to help you reverse diabetes as well!

Fun Facts About Me

I bet you didn’t know:

I am blessed to be mother of 2 adult children and 2 beautiful grandchildren!

I grew up in the midwest farm country of Iowa and Minnesota and love country life!

My favorite food is ice cream and I still have not mastered portion control on this one!

My favorite weekend mini-vacation is going to the North Shore of Lake Superior to hike and watch the waves crash against the rocks!

I enjoy gardening, spending time with family, playing tennis if I get a chance, good food, good beer and good coffee. (I’m doing my best to practice moderation with those last three!) smile

My Education & Training

Over 25 years experience helping people with diabetes and nutrition.

My credentials are RDN, LD, CDCES which means Registered Dietitian Nutritionist, Licensed Dietitian (in Minnesota and South Dakota), and Certified Diabetes Care & Education Specialist.

I graduated from Viterbo College in 1993 with a bachelor’s degree in community-medical dietetics.

Since then I have worked in clinics, community programs, employee health coaching, and developed successful diabetes and nutrition programs from the ground up.

I have training and experience in Continuous Glucose Monitoring systems and insulin pump therapy. In fact, CGM is a very powerful tool for reversing diabetes and should be part of every diabetes therapy plan, if possible.

I am also trained in the LEAP program for food sensitivities and am in the process of adding functional nutrition strategies to my approach as well. With all of these powerful tools, we can reverse diabetes together!
